The classic: Mac'n'Cheese
1 & 2/3 cups of macaroni boiled until tender (unless you prefer firm) While that's boiling, take a large pan/dish, cover the bottom with milk (I use skimmed). Sprinkle in a little bit of pepper, nutmeg, and parsley, and add some grated cheddar cheese. Cover the bottom of the pan in the boiled macaroni after you've shaken out as much of that fantastic 'goo' in the water. Absolutely coat this layer in cheese. You don't even want to SEE that there's macaroni under there. Add a second layer of the macaroni - this will probably be your top layer, unless you used more than I told you too (i.e. around 2 & a 1/3 cups). You may add some salt to this layer if you like - I generally don't. For extra flavor, sprinkle on some paprika and cinnamon, and add a bit more pepper. Coat this layer in cheddar as well. If you're a cheese lover, you might want to try blending some mozzarella and Parmesan in there. (You won't regret this - it's fantastic.) If you're really adventurous, you can try mixing some fresh vegetables (tomato, green onion) in after you take it out of the oven. I usually don't wait more than a few minutes to let it cool - tastes the best when it's still gooey and fresh!

Here's one from my late Grammy. Chicken goes a long way (A Grandma Polk Recipe)Ingredients - 2 cups rice
- 1 can cream of celery soup, diluted
- 1 can mushroom soup, diluted
- 1 lb chicken breast, skinned and cut up
- 1 package Lipton Onion Soup Mix
Directions - 1. Sprinkle rice in a greased pan and pour soups over it.
- 2. Lay chicken over the top. Sprinkle with the soup mix.
- 3. Cover with foil and bake in 375 degree oven for 2 hours

A simple one from my most darling husband:
Sauce:
2 tsp olive oil 8 small peeled plum tomatoes 1 cup basil 2 chopped garlic cloves 1/2 small white onion, diced Salt and pepper to taste
-------
1/2 lb pasta
-----
In a saucepan, heat the olive oil and garlic and onions until the vegetables begin to brown, about 1-2 minutes
Add everything else listed as part of the sauce. Squish tomatoes with a fork.
Cook for 20 - 25 minutes
While sauce cooks, boil pasta as instructed to desired tenderness. Drain.
Pour sauce over pasta
Garnish as desired.
Eat.
